Doctored Up Eggnog Cake Mix & Glaze

I've been so excited to try the Christmas eggnog flavor in my cooking recently, and now that my boys are all back to feeling better after coughing for what's felt like a month, I've gotten back to some experimenting with new flavors in my kitchen.  Thanks to my friends at Farmland Fresh Dairies who sent us some of their fresh and delicious eggnog to try out for the holidays.  Eggnog definitely makes me think of Christmas, and so I am trying it out in a few ways this month.

I decided to make a "doctored up" cake mix featuring eggnog one night after work recently just to have a sweet treat around for my family for the week.  I try to involve my oldest son in cooking with me as often as I can, and this recipe is so quick and simple that I couldn't resist sharing.  "Doctored Up" cakes simply use store bought cake mixes, but are much more moist and dense than the cakes that involve just following the directions on the box - no one can tell that they are not really homemade. ..believe me!  I prefer using Duncan Hines cake mixes because they are so much more moist than the other brands.  This Eggnog Cake Mix recipe is easy and perfect for someone looking for the ease of a cake box (like a working mom of 3 like myself), but wants to jazz it up with a homemade flavor.  There's only ONE bowl involved, so a quick mess to clean up afterward too!  The eggnog glaze is amazingly delicious - most of the eggnoggy yumminess is in this simple glaze, which you can use on the cake or cookies you make this season.  Just make sure to glaze your cake when you're certain it's completely cooled.






Cake Ingredients:

  • 1 Box of White Cake Mix
  • 1 tsp. Vanilla
  • 1/2 Cup of Melted Butter
  • 1/2 Cup of Farmland Fresh Dairies Eggnog
  • 3 eggs










Eggnog Glaze:

  • 1 Cup Powdered Sugar
  • 2 Tbsp. of Eggnog
  • 1 Tsp. Amaretto Liquor (optional)













Directions:
1.  Preheat oven to 350 degrees.  Grease a bundt pan.  Combine cake mix, butter, eggs, vanilla, and eggnog until smooth.

2.  Bake for 35 minutes, and let the cake cool completely.

Eggnog Glaze:
1.  Combine eggnog, powdered sugar, and optional amaretto with a fork or whisk.  Depending on how runny or thick you want your glaze, add in more powdered sugar or eggnog.

2.  Glaze the cooled bundt cake - go heavy on the glaze because that's where you taste most of the eggnoggy-goodness!
