Pasta Alfredo with Chicken & Broccoli in 20 minutes!

This week I was inspired by an expecting #instamom friend of mine to make Pasta Alfredo with Chicken & Broccoli...an easy and delicious dish to make at home that I always thought could only be possible in a restaurant. I made this in less than a total of 20 minutes while my kids played in the living room.  I have to give credit for this recipe from the amazing @treencake - check her out for more on Instagram. 

I was really drawn to trying this recipe because it calls for making your own Alfredo sauce with only 3 ingredients! Butter + Heavy Cream + Pecorino Romano cheese = you’ve got all you need to make your own homemade Alfredo sauce! I can’t believe I ever used the jarred kind --> gross, plus a ton of preservatives.  You can use Alfredo sauce on a variety of dishes - it can be added to chicken, any kind of pasta, as pizza sauce, on top of baked potatoes, etc.  Here’s how to make your own simplest and freshest Alfredo Sauce:

Ingredients:
  • 1/2 stick butter
  • 1 cup Farmland Fresh Heavy Cream
  • 1 cup shredded Pecorino Romano Cheese


Directions:  Simply heat up the butter and heavy cream in a large saucepan over low heat, stirring for about 5 minutes until it thickens.  Next, add in the shredded Pecorino Romano until it melts.




Now, here is how to use this Alfredo sauce to make Alfredo Pasta with Chicken & Broccoli, which was a hit with my family:

Ingredients:

  • 1 lb. chicken cutlets cut into cubes (seasoned as you prefer - salt and pepper will do)
  • 1 lb. Linguine (or whatever other pasta you prefer)
  • 1 cup Broccoli

Directions:  Cook the pasta in boiling water with a teaspoon of salt.  After about 2 minutes, add the broccoli into the pan where the pasta is cooking.  Saute your seasoned chicken in a pan.  Drain the pasta and broccoli after about 9 minutes and add it to the pan with the Alfredo sauce. Finally, add the cooked chicken and mix everything altogether.  

Be sure to enjoy this dish as soon as it's ready because once the butter solidifies and cools it just doesn't taste the same.
