Easy, Creamy Scalloped Potatoes Recipe

These creamy scalloped potatoes make the perfect side dish to almost anything!  As a busy mom of 3, this dish takes me under 10 minutes to prepare, and I just set it to bake in the oven for about an hour.  There are many different versions of this dish out there, but I like to think this is the simplest, most basic one for the busiest of mamas!  This dish is also super easy to make ahead and reheats perfectly thanks to the heavy cream!  I have partnered with Farmland Fresh Dairies to use the richest, most natural heavy cream for my recipe.

You can pair these potatoes with any kind of meat and veggie, and they will be delicious.  Everyone, including the kids, love them in my house.  And when you get the hang of this easy recipe, you can really get creative by adding in some fresh herbs or sliced onions when you salt the potatoes, or by sprinkling some shredded mozzarella or parmesan cheese on top for an extra cheesy kick.  The more shallow your baking dish, the better, so that your potatoes are really dunked into the heavy cream.  Take a look at the pictures for guidance on how things look when making this.




Ingredients for a 9x13 inch Baking Pan:

  • 5-6 Russet potatoes, peeled and cut into 1/8 inch round slices
  • 1 tablespoon of butter
  • 1 Pint of Farmland Fresh Heavy Cream
  • Salt & Pepper for seasoning (or what I prefer to use - Vegeta, All Purpose Seasoning)
  • 1 sheet of aluminum foil needed
4 Simple Ingredients



Directions:
1.  Preheat oven to 425 degrees.

2.  Spread about half of the prepared, salted, potatoes onto the bottom of a shallow baking pan.
(I prefer to use a glass one)


3.  Pour half of your Farmland Fresh Heavy Cream onto the pan.

4.  Add the rest of the prepared potatoes to the pan, and pour the remainder of the heavy cream over all the potatoes.



5.  Spoon 5 pieces of butter on top of the potatoes, making sure to add butter to each of the 4 corners and middle area of the baking pan.


6.  Bake, covered with aluminum foil for about 40 minutes.

7.  Uncover and continue to bake for 15-20 minutes, until the edges are brown and potatoes feel tender when pierced with a knife or fork.
